Food Science and Technology: Methods & Standards

These are the testing methods and standards that are going to be useful in the lab. We don't have access to all the web resources, but you can contact a librarian for assistance in locating reosurces.

• AACC Methods of Analysis

  Geared to grain and cereal research.

• AOAC Methods and Standards

  Publishes standardised, chemical analysis methods designed to increase confidence in results of chemical and microbiologic analyses.
  We have access to the print edition through the library catalog.

• Bacterialogical Analytical Manual (BAM) online

  Published by the FDA, and they say it best, "...the agency's preferred laboratory procedures for the detection in food and cosmetic products of pathogens (bacterial, viral, parasitic, plus yeast and mold) and of microbial toxins."

• ISO Standards

  International standards geared toward industry and manufacturing.

• The Compendium of Analytical Methods

  Canadian methods geared toward food safety, food quality esp. in regards to microbial material content, and in support of foodborne disease investigation.
